You're watching "Healthy Living," brought to you by PhD Weight Loss and Nutrition, featuring Dr. Ashley Lucas.

When you're counting calories and have a consistent exercise regimen, you expect to see immediate, impactful results. But sometimes that doesn't happen. Scientific research offers an explanation for why weight loss can be incredibly difficult and nearly impossible for some without the right resources. Much of what we know about dieting and exercise does not address those elements like environment, genetics, and other factors that contribute to how we may metabolize food and may explain why the scale just doesn't budge. For example, if you're a Type 2 diabetic, your metabolism is unique compared to someone who has 20 to 30 pounds to drop and has no underlying medical conditions. At PhD Weight Loss and Nutrition, we'll get to know you to understand what has happened in your life that shifted how your mind or body deals with food. Some people are naturally lean and their metabolism is very tolerant so they can eat, exercise, and burn calories easily, but that's not the usual story. The secret to successful weight loss is understanding that it's not just about the science. It's not just about what and when you eat, but it's also about how you think and how you feel. And you're much more likely to maintain success when you create a mindset shift. We'll help you do that. At PhD, in everything we do, we challenge the standard ways of thinking when it comes to nutrition and weight loss. Thinking and acting differently is at the core of our program. It's super simple, effective, based on science, and customized for you and for every person who is ready to make it change in their health and their life.

Growing Community, Culture, and Climate-Adapted Crops

Pueblo Seed & Food Co. is a family-run organic farm and seed enterprise rooted in deep stewardship of land, seed, and community. Established in 1996 and now operating on irrigated acreage near Cortez, Colorado, the company grows a wide diversity of certified organic crops—open-pollinated seeds, chile peppers, varietal garlic, vegetables, legumes, and heritage grains—selling them as seeds, fresh produce, and handcrafted foods through their Seed & Bakehouse retail space. Their mission centers on renewing and strengthening community resilience by stewarding healthy seeds and food, guided by regenerative, biodynamic, and conservation farming traditions that honor both plant genetics and human stories. As winter approaches, Farm Direct Seed & Food Co. invites its community to celebrate the Winter Solstice Fundraiser on Sunday, December 21, 2025, at their downtown Cortez Bakehouse. This festive gathering not only marks the seasonal turning point with music, hands-on milling and baking, and holiday shopping, but also serves as a kickoff to their exciting new initiative—the Pueblo Seed & Grain Hub, developed in partnership with the Onward! Foundation to expand regional capacity for drought-tolerant grain and legume production. Join in the spirit of the season with whole grain cookies, community, and support for food and seed security in the Southwest. By Paige Sparks.
