The small town of Mancos has a new dining spot. Roosters is a family-owned restaurant with a focus on breakfast. Roosters might have "chicken" in its name, but don't let that fool you, it's not about poultry. Owners Rubi Rubio and Samuel chase said that the rooster’s early morning call inspired the name for their new breakfast spot. That's one of the things that we do get a lot is, yes, we are roosters. But it was more of the idea of making this the breakfast place, which, we do plan to expand our breakfast. But that was one of our main focus and that's how roosters came to be, was, you know, you think of a roosters this weekend really early in the morning. Rubi and her husband, along with her mother, Isela opened the restaurant after moving to Mancos from Denver. Although opening a restaurant has come with its challenges, it’s been a longtime dream for Rubi. it's very therapeutic for me to cook, so I've always enjoyed it. And like I said, it was one of my dreams was to own a restaurant. Roosters offers affordable breakfast burritos with house-made green chili sauce, perfect for a quick bite. But their chilaquiles and enchiladas have quickly become some of the most popular menu items. The chilaquiles we get in our stacked enchiladas have been the first two. I mean, it's nonstop. since opening in late November, Roosters has received positive feedback from the Mancos community. Rubi and sam are grateful for the support from their small town. We do rely on the community a lot to get through the tough times, you know, and we really do appreciate those people that have stuck with us from the beginning that we see, over and over again. We really do appreciate those people. Roosters is located across from the Conoco on U.S. Highway 160 and serves breakfast and lunch but eventually plan to expand with a dinner menu.
